Violations cited in this report must be corrected within the time frames below.
*4 *1) Several locations throughout the facility contained water bottles that were either open, or empty.
2) Shopping bag found in one of the beverages coolers containing personal food items.

An employee may not eat, drink or use any form of tobacco unless the use occurs in designated areas where the contamination of exposed food; clean equipment, utensils and linens; unwrapped single-service and single-use articles; or other items needing protection cannot result. Designate a proper area and/or refrigerated area for employees only to prevent cross contamination.
 New Violation.
*13 *There was a ceramic plate resting in the seasoned croutons.
If scoops/wares are going to be stored in the food product itself, a proper scoop must be used to prevent contamination.
 New Violation.
*13 *Cans and other dry goods are not being protected at the end of the main cookline. Observed food spillage on top of the cans. Ensure that this area is cleaned before use.  New Violation.
*13 *Facility is using wiping clothes to cover food in the walk-in cooler. During times of storage, food may only come in contact with materials that are of non-absorptive quality which prevent drips and spillage from effecting the safety of the food.  New Violation.
*13 *Several products held in refrigeration though the facility are not being covered. Cover all products in refrigerators to prevent contamination.  New Violation.
*13 *Facility is using left over butter wrappers to cover and protect some of their food products in the prep units.
Must use a proper cover or single-use plastic wrap for food protection.
 New Violation.
*13 *Upon arrival, a food-safe container of cheese was resting in direct contact with a pan of gnocchi in the first prep unit of the main cook line. Food may only come in direct contact with the sanitized portion of a food safe container. The cheese container was relocated and the pan of gnocchi was discarded.  Corrected On-Site.  New Violation.
*14 *Upper interior surface within the ice machine contains black mold-like substance.
Ice was emptied and discarded. Service was called for and they should be out on Oct 24, 2024 to conduct a through cleaning.
Make it a part of your nightly routine to wipe the inside with a clean wiping cloth to cut back on the growth between services.
Clean and sanitize interior surfaces prior to next use.

*20 *Upon arrival, a container holding a mixture of TCS foods was being stacked above the frost line in the second prep unit of the main cook line, and was measuring a temperature of 50F. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
The contents of this container was discarded.
 Corrected On-Site.  New Violation.
33 Observed several vacuumed sealed packages of fish completely thawed and being held in refrigeration. All vacuum sealed fish needs to be fully removed from packing before thawing to prevent growth of hazardous micro-organisms. Items were discarded.  New Violation.
36 *1) Upon arrival, the back exit door was propped open, allowing the entry of flies.
2) Facility has electric insect repellant installed above the door and insects need to be removed. Devises may be used in a food facility during non-operating hours, and may only be located in places where contamination may not occur.
 New Violation.
37 Several items in the walk-in cooler and the walk-in freezer are stored on the floor. All food items need to be at 6inches off the floor to prevent contamination.
It is the recommendation of this Department that the Freezer be re-organized, and facility will have 6 months to comply.  New Violation.
39 Several used wiping clothes were found resting under the grill next to the fryers of the older cookline. Soiled linens shall be kept in clean, nonabsorbent receptacles or clean, washable laundry bags and stored and transported to prevent contamination of food, clean equipment, clean utensils and single-service and single-use articles. Ensure that article are stored properly.  New Violation.
   
General Remarks
Notes:
*Facility opened their bar without an approval inspection. Today served as that inspection and bar is approved for use at this time.
*There was a used container of sangria behind the chilling pint glasses in the ware chiller behind the bar. Ensure that all food containers are removed and foods inside is discarded at regular intervals.
*The shelf that stores the pots and pans next to the hand washing sink should have a splash guard to prevent contamination of clean wares.
*One single fruit fly found in a bottle of alcohol behind the bar. Ensure staff is checking bottles in the beginning of day and discard anything contaminated.
*Compliance inspection will take place in 1 week and fees could be assessed at that time.
